Happy October 1! For me, that means the start of pumpkin season. And what better to celebrate than with a ton of healthy pumpkin recipes?! I have several pumpkin recipes to post over the next two months, but until then, I hope my healthy pumpkin roundup will help you with some of your pumpkin season baking needs. :)

One thing to note for the gluten-free recipes is that you need to use gluten-free oats for the recipes to be gluten-free.

      I hope you’ll enjoy the recipes you try! And not having canned pumpkin is a bummer. At least we have fresh pumpkins to make homemade puree. ;)

    I am most anxious to try a couple of smoothies, your pancakes, and the coconut chicken curry.

    You will be in the Netherlands for their independence day, which is October 5. If you eat meat, try their national dish Hutspot (hodgepodge), which has beef with mashed up carrots, potatoes & onions, seasoned with black pepper. (I had it in 1967 and still remember it fondly.) Hope you have a great visit!
