Soft, chewy and relatively healthy, these grain-free Chinese almond cookies are just as delicious as the more traditional kind!

The Chinese New Year is in four days! Doing anything? I’m assuming not. But you know what you could do? Make these Chinese almond cookies! :D
Not only are they grain-free, but they’re dairy-free and vegan! I often have a problem coming up with vegan goodies, just because I’m fond of eggs in baked goods, but you won’t miss them here!

Another Texan living in Germany and first time commenter. I enjoy reading your blog and have found it very helpful with the substitutions especially for baking! We are vegan and have no issue with gluten so I haven’t made many recipes but I will be trying the almond cookies this weekend and wanted to say thanks for all the work you do.

When I make something new, I often think about how I could make it vegan but the eggs… they get me every time! Thanks so much for your kind comment. We are just south of Heidelberg in Wiesloch. I’m getting better at veganizing things but am not as confident with the gluten free flours AND egg substitutions. And I still enjoy reading even if I don’t end up trying something.

Erin, I love almond cookies! I mix ground almonds into the cookie dough all the time. I also like to add chocolate chips sometimes.
