Chocolate Protein Truffles

I made these within a few hours of reading Heidi’s post over at Food Doodles. I couldn’t get them out of my head. They looked so quick and easy! And they are. 


After my king cake post with its bright colors, posting these pictures is killing me. They’re not very inspiring. In fact, they kind of depress me. 


But don’t let the pictures depress you. These truffles are really yummy! So you have to make them. You just have to.


Ingredients:
  • 1/2 cup (~128 grams – each nut butter is different) nut butter (I used maple cinnamon almond butter)
  • 1/3 cup (105 grams) honey
  • 1/4 cup (20 grams) unsweetened cocoa powder
  • 1 teaspoon vanilla
  • a pinch of sea salt
  • 1 cup (80 grams) rolled oats, non-contaminated for gluten-free
  • 3/4 cup (70 grams) oat bran (or coconut, ground flax, wheat germ, ground nuts – gram measurement would be different, make sure you use a GF option if needed)
  • 1/2 cup of add-ins (I used chocolate chunks)
Directions:

Warm the nut butter and honey over low heat in a small pot. Once it has liquified, take the pot off the heat and stir in the cocoa powder, vanilla and salt. Once it’s well combined, stir in the oats, oat bran and add-ins. Chill until the mix isn’t warm anymore, and then roll into small balls. If the truffles are too dry, squeeze the balls together (instead of rolling them). Roll in coconut or nuts or whatever you like. Can be stored at room temperature or in the fridge.

    Hi Erin,

    I love your site! But one thing – this recipe is indexed with grain free recipes – but with oat bran and oatmeal, it is not grain free (unless you made some adaptions that I didn’t find).

      Oh, goodness! Thank you for pointing that out. That should have definitely been marked as whole grain and not grain-free! I just fixed it. Thank you again! :)

    Your truffles look super yummy, what's depressing is that I can't have any.

    Oh well… I'll have to adapt! I'm planning on making carrot cake energy balls or bars this week-end. That should do the trick!

    No chocolate, though. Still good!

    Heidi – Yeah, they're fantastic! Next time I have to try peanut butter. And add lots of peanuts! I'm really into peanuts at the moment. :)

    Becca – I have that problem too which is why I hate mini things. These are okay, though. I don't know why. I didn't have the desire to eat all of them at once. They were delicious and totally worthy of overdosing on, but… I don't know. Maybe they're too filling for that?

    These look good, and you managed to make them look cute too :K However, if I did make these, I think I would go over-board with the portion control. I have a habit of eating a lot of small things. :P

    I love energy bars/balls and these look amazing and not depressing in the least! It's just a different type of photo but still delicious and appetizing! :) here's another recipe I need to make and bring to work this week!!! Especially since they are quick and easy…I am ALL about that lately :)

    Miryam – Thanks! I was wondering what energy bars you were talking about so I went and found them. And then I realized why I never commented – because they have prunes. In December, I was still refusing to eat dates and prunes (I still haven't tried prunes but I'm willing now!) so I have to give your bars a try. :)

    These are very similar to the energy bars I made a while back and I am sure they are also superb.

    Like you mentioned in your post, super easy to make and really yummy. When I make mine I make them at least 1 every two weeks, double the batch and I have it on the fridge for sweet cravings and breakfast on the go :-) Great pictures by the way
