Almond Paste Recipe (4 ingredients, so easy!)

This almond paste recipe only calls for four ingredients, is much cheaper than store-bought and just takes minutes to make!

Ingredients

  • 2 1/3 cups (231 grams) blanched almond flour or 1 1/2 cups + 1 tablespoon (231 grams) blanched almonds
  • 1 1/4 cups (136 grams) powdered sugar
  • 1 (32 grams egg white) large egg
  • 1 1/2 teaspoons almond extract
  • 1/4 teaspoon salt

Instructions

If using almond flour:

  • Place everything in a food processor and pulse until totally combined. It comes together very quickly. Or mix by hand in a large bowl.

If using blanched almonds:

  • Place the almonds and 3/4 cup powdered sugar in the bowl of a food processor fitted with an S-blade.
  • Process until very finely ground but do not overmix.
  • Add the remaining 1/2 cup powdered sugar and process until well combined.
  • Add the egg white, almond extract and salt and pulse until a big clump forms. This is your almond paste.
  • It shouldn't be very sticky. If it is (which could happen if your almond flour is coarse), you can add a little sugar at a time unless it's less sticky.

For both versions:

  • Form it into a log and refrigerate until ready to use.
  • Store in the fridge for up to 3-4 weeks or freeze for up to 6 months.
