This almond paste recipe only calls for four ingredients, is much cheaper than store-bought and just takes minutes to make!
If using blanched almonds:
Place the almonds and 3/4 cup powdered sugar in the bowl of a food processor fitted with an S-blade.
Process until very finely ground but do not overmix.
Add the remaining 1/2 cup powdered sugar and process until well combined.
Add the egg white, almond extract and salt and pulse until a big clump forms. This is your almond paste.
It shouldn't be very sticky. If it is (which could happen if your almond flour is coarse), you can add a little sugar at a time unless it's less sticky.
