Pineapple Daiquiri

This pineapple daiquiri is a cool, refreshing summer drink with tropical pineapple, tart lime, and a touch of sweetness. Easily scale the recipe for one or a whole party.

Ingredients

  • 2 cups (420 grams) frozen pineapple chunks
  • 1 cup (220 grams) ice
  • 2 ounces (1/4 cup or 60 ml) white rum
  • 2 ounces (1/4 cup or 60 ml) pineapple juice
  • 1 ounce (2 tablespoons or 30 ml) lime juice freshly squeezed
  • 1 ounce (2 tablespoons or 30 ml) simple syrup or maple syrup, or agave - optional and to taste

Instructions

  • Add the frozen pineapple, ice, rum, pineapple juice, lime juice, and simple syrup to a high-speed blender and blend until smooth – about 1 minute.
  • Divide between two glasses and enjoy immediately.
