Ginger Berry Popsicles

These ginger berry popsicles only have five ingredients and are naturally paleo, gluten-free, vegan, dairy-free and are sweetened with bananas!

Popsicles have never really been my thing. The ones from my childhood were basically sugar, artificial flavoring and coloring. I remember even getting headaches when eating them – and I don’t get ice cream headaches!

 

I just looked up the ingredients of the most popular popsicle brand of my youth.

Water, high fructose corn syrup, corn syrup, sugar, contains 1 percent or less of each of the following: malic acid, citric acid, guar gum, natural and artificial flavor, red 40, ascorbic acid (vitamin c), locust bean gum, cherry juice concentrate

Mmm! Yummy, right? :D

The ingredient list for these ginger berry popsicles?

Blueberries, strawberries, bananas, coconut milk, ginger

I used a banana to sweeten them and add a little creaminess. But just to be clear, these aren’t creamy like ice cream. They’re icy. If you don’t want to use a banana, try using an avocado instead and add a sweetener to taste. Without a banana or avocado, these are basically pureed frozen fruit with some coconut milk, which isn’t the best treat texturally.

Coconut milk also adds a little fat and creaminess to the popsicles, but if you want to use regular milk, that’d work, too. They’ll just be a little icier!

If you’re not a ginger fan, you’ll want to reduce it by quite a bit or leave it out altogether, as it’s the predominant flavor. I used to have an upset stomach pretty often, and I was throwing ginger into everything. I’m not sure whether frozen food is technically good for nausea, but my stomach certainly felt better after eating one of these the other day!

I used this BPA-free popsicle mold and got ten 3-ounce (.375 cup) popsicles. If you don’t have a popsicle mold, consider making half the recipe for a delicious, generously sized smoothie!

These ginger berry popsicles only have five ingredients and are naturally paleo, gluten-free, vegan, dairy-free and are sweetened with bananas!

Ingredients

  • 1 cup (120 grams) blueberries
  • 8 medium (180 grams) strawberries hulled
  • 35 grams fresh ginger peeled and chopped into 4 pieces, about a 2" piece
  • 1 cup (240 ml) full-fat coconut milk canned
  • 2 large bananas mine were each 205 grams with the peel

Instructions

  • Blend everything together in a food processor, blender, or with an immersion blender.
  • Pour into ten 3-ounce popsicle molds and freeze for at least 4 hours.
  • To unmold the popsicles, let the mold sit at room temperature for about 15 minutes or run hot water around the molds.

    1. Hi there! Thanks. :) Most definitely! It can be quite potent so I recommend starting off with 1/4 teaspoon and adding more to taste. Enjoy! :)

  2. During the summer I eat a popsicle almost every single night. I LOVE THEM! The addition of ginger would suck me right in. My stomach always feels “blah” so I think the ginger would totally help!

  3. The only popsicles I ever at as a kid were the one we got at the end of the day at camp and they’d leave you a sticky, food colored mess. Ice cream was my thing, it wasn’t until I started making my own that I enjoyed them again. Pureed fruit and your own flavoring is so the way to go. This looks like a great healthy after dinner sweet treat.

  6. Now that’s an ingredient list I can get on board with. This would have been the best treat when I was pregnant, I basically had everything w/ ginger in it for the nausea!

  8. Oh man – it makes me cringe to see the ingredients I used to consume in my popsicles as a child. Yikes! These are my kind of popsicles. They are so easy to make at home and so fun to eat!

    1. Isn’t it terrible?! Why is all of that necessary when they’re so easy to make with natural stuff?

Or you could make the whole recipe and have enough for 2 smoothies so your husband could have one, too… I usually don’t have much use for popsicles, but smoothies are my favorite breakfast or snack. This one sounds great. And I might just have to invest in a popsicle mold for while we’re at the beach where it’s hot and humid – like it is right now. Too bad I can’t just wish them into being and have them appear in my freezer.
